Proper Pizza

2015 London Pizza Festival champions Made of Dough are migrating from South Landan to West for 6 weeks. They make Neapolitan pizza with a nod to Southern Spain. In the words of one -

We make Neapolitan pizza with a nod to Southern Spain. There’s 3 of us who run the business - Henry, Harry and I, all of us old mates from school. Good Catholic boys. My family have been based in Jerez trading in port and sherry for generations, I grew up working with wine merchants at (what was) our family business Lea & Sandeman. Henry’s family are from the Amalfi coast, he grew up in his fathers Italian restaurants in London, whilst many of his family still live in Positano making mozzarella and limoncello. Harry’s the odd one out; he's pure Brit! He also grew up in London but escaped as soon as he could and spent the past 5 years working in Ethiopia - he’s a romantic adventurer at heart.
